Ponte Vedra Beach, FL (January 2019) – The Lodge & Club at Ponte Vedra Beach in Northeast Florida, has appointed Devlin Cathey as Executive Chef to oversee culinary operations for members and guests. With over 20 years of hospitality industry experience, South African-born Chef Cathey brings global expertise to amplify the four dining destinations at the AAA Four-Diamond oceanfront property, including the signature restaurant The Sea View Grille.
With specialties in hospitality management, fine weddings and events catering, Chef Cathey joins The Lodge & Club from his previous role as Executive Chef and F&B Director of Country Club at Salisbury in North Carolina. He brings a varied skill set to the culinary team at The Lodge & Club, having owned his own restaurants and worked on superyachts, traveling throughout the U.S., Caribbean and South America. With a passion and deep understanding for locally sourced ingredients, Chef Cathey plans to incorporate fresh seafood and seasonal vegetables into his menus and weekly specials. He will add a modern, healthy twist on traditional dishes such as a summer surf and turf appetizer using peppered beef carpaccio, scallop ceviche and an arugula pickled red onion salad. He also plans to showcase his skills in dishes highlighting different cuts of meat or pairing different temperature items on the same plate to enlighten the senses.
