Eau Claire, WI (May 2018) – The Informalist, 205 South Barstow Street, Eau Claire, located at The Lismore Hotel, announced today the restaurant’s new Executive Chef, Chef Joseph ‘Joey’ Sieg. Joining the restaurant with 16 years of industry experience, Sieg will oversee and manage all kitchen operations and will work to expand the culinary staff’s skills and creativity through innovative strategies and imaginative recipes. Sieg aims to provide a relaxed yet innovative culinary experience for the community while driving profits for the restaurant and hotel.

A native to Wisconsin, Sieg is originally from the city of Osseo. He attended Chippewa Valley Technical School where he practiced general studies with an emphasis on psychology, sociology and business management. Before joining the Informalist team, Sieg worked as the general manager of Osseo Golf Club and later re-entered the culinary industry by becoming the sous chef at Local Lounge.
Located adjacent to the lobby of The Lismore Hotel Eau Claire – a DoubleTree by Hilton, The Informalist offers locally sourced, regional cuisine with international influences. Signature dishes include tastings of the finest, award winning WI cheeses, comfort foods such as real WI Corn Fritters, house-made Soft Pretzels, unique Burger and Pizza selections, as well as seasonal outward delights such as Morel Mushrooms and Cippolini Onions with Braised Rabbit and Rabbit Demi-Glace.
