Coronado, Calif. (August 29, 2017) — Hotel del Coronado, fondly referred to as “The Del,” has named Stefan Peroutka as executive chef of San Diego’s iconic beachfront resort. The legendary Hotel del Coronado has welcomed discerning travelers for nearly 130 years to experience the Southern California coastal lifestyle and exquisite oceanfront dining.
In his new role, Peroutka will oversee the resort’s wide range of culinary operations, which span from signature fine-dining restaurant 1500 OCEAN, the storied Babcock & Story Bar, and the opulent Crown Room Sunday Brunch, to the modern ENO Pizzeria & Wine Bar and casual Sun Deck Bar & Grill, to name a few. Peroutka will not only manage operations for multiple dining experiences, but also a culinary staff in the hundreds, banquet and catering events, food and wine purchasing, dining presentation and service, and more.

Before heading seaside, Peroutka served as the executive banquet chef of The Venetian and The Palazzo Resort and Casino in Las Vegas, after earning his chops as executive sous chef of Michelin-starred Aureole restaurant at the Mandalay Bay Hotel and Casino. Peroutka’s career has taken him all over the world, from the Five-Star Relais & Chateau restaurant Erna’s Elderberry House in California to the renowned Aquarello restaurant in Germany.
A native of Austria, Peroutka was classically trained at the Salzburg Hospitality and Culinary School. He is also a member of the prestigious Les Amid d’Escoffier Society of Las Vegas. When not in the kitchen, Peroutka is an avid cyclist, competing regularly in road races, century rides, cross cycling events, and mountain biking.
