Cantwell brings more than ten years of top-notch culinary experience to his new post. The chef comes to Gateway Canyons Resort from Veladora at Rancho Valencia, a Forbes Five Star and AAA Five Diamond restaurant, where he served as Chef de Partie. Here he was responsible for gathering ingredients, managing and training new cooks, and overseeing all banquet events. Among his other accolades, Cantwell has previously served as Sous Chef at Spike Africa’s Fresh Fish Grill, Restaurant Chef at Eldorado Country Club, and Chef de Partie at Desert Sage Restaurant. Throughout his established history in the culinary industry, Cantwell has proven his ability to create extraordinary dishes, manage kitchens and staff, and exceed guest expectations.
