Willamette Valley, Oregon – January 5, 2018 – The award-winning Allison Inn & Spa welcomes Kenny Giambalvo as Executive Chef. In his new role, Chef Giambalvo will take the helm of all culinary operations at the 85-room destination resort including the signature restaurant JORY, celebrated for its seasonal Oregon Wine Country cuisine.
With over 26 years of Executive Chef experience under his belt, Chef Giambalvo brings extensive knowledge and understanding of the culinary world to The Allison. His early career achievements range from New York fine dining experience at The Rainbow Room, Le Cygne, La Cote Basque, The Polo and more, while his Executive Chef experience comes from a few years at Ristorante Bologna in the Hotel Marina Mandarin in Singapore. After making his way through Remi Ristorante in Santa Monica, CA, Chef Giambalvo most recently comes from 11 years at Bluehour restaurant, which he co-owned and operated.

The culinary team at The Allison prides itself on developing innovative dishes through the creative use of ingredients from the 1.5-acre on-property Chef’s Garden and greenhouse. In addition to JORY, the exceptional garden-to-table menu is available throughout the property including in-Room Dining and on the light fare menu at the Allison Spa Café. An intimate dining experience is available at the Chef’s Table adjacent to the glass-enclosed kitchen, serving 2-10 people, and two private dining rooms are available for dinner parties seating up to 12 guests. The JORY menu is complimented by an extensive 800-label wine list, managed internally by The Allison’s newly appointed Wine Director Kristen Young.
