Zihuatanejo, Mexico – April 10, 2017: Viceroy Zihuatanejo has announced the appointment of Jorge Ildefonso as Executive Chef of the chic resort on Mexico’s Pacific Coast, with responsibility for all of the restaurants, bars and catering.
Chef Ildefonso, who has more than 12 years of culinary experience in leading hotels and resorts in Mexico, comes to Viceroy Zihuatanejo from the exclusive Viceroy Riviera Maya on the Mexican Caribbean, where he was Executive Chef.
At La Marea, Viceroy Zihuatanejo’s signature restaurant, he will be orchestrating a new 'Sea-to-Table' dining experience that takes full advantage of the tremendous bounty of the highest-quality seafood brought in fresh daily by the town’s fishing fleet, with fruits, vegetables and herbs sourced from local farmers and organic when available.
Chef Ildefonso is also responsible for La Villa restaurant, offering contemporary interpretations of Pacific-Mexican cuisine enjoyed in a casual, al fresco beachfront ambiance; the new Marea Sushi & Ceviche, the first and only sushi and ceviche bar in the resort destination of Zihuatanejo, featuring a bespoke menu prepared with the finest locally sourced fish, shellfish and produce and a beautiful location at the beach; and weddings and banquets.
Chef Ildefonso’s previous experience includes serving as the Chef de Cuisine, Hotel Grand Luxxe, Nuevo Vallarta; Executive Sous Chef, Hotel Villa del Palmar, Loreto; and Chef de Cuisine, The Grand Mayan Hotel, Los Cabos. He earned a Sous Chef designation from the Uniglobal Universidad Interamericana de Puerto Rico in 2007.
