DENVER, CO – June 14, 2023 – HALCYON, a hotel in Cherry Creek, the 154-room boutique hotel nestled in the heart of Denver’s chicest neighborhood, and signature restaurant Local Jones are delighted to announce today the promotion of their new culinary leader, Executive Chef Daniel Young.
“Over the past year, Chef Young has been a beacon of positivity,” said Makeready Culinary Director Charles Olalia. “His endless energy has been instrumental at Local Jones and added to the positive momentum for our culinary team, serving as an active listener and humble leader with a passion for providing great experiences. He loves making charcuterie, can talk about fried chicken all day, and climbs every mountain possible in Colorado, literally and figuratively.”
Chef Young joined the HALCYON team in March 2022 as executive sous chef and during his time, assisted in overseeing all aspects of the banquet and catering department, as well as the hotel’s three culinary concepts. Most notably, he launched the hotel’s lively neighborhood all-American bistro and bar, Local Jones. Today, Young will oversee all culinary experiences at HALCYON, with a main focus on Local Jones, curating menus and leading the team in offering nostalgic American favorites, playful cocktails and extensive wine programming.
With more than 12 years of food and beverage experience, Young previously served as the chef de cuisine at Fore Street Restaurant in Maine, where he led menu development and execution for the James Beard award-winning farm-to-table restaurant. He also held several positions across various Michael Symon Restaurants in Cleveland, Ohio and Las Vegas, Nevada— ranging from executive chef at Mabel’s BBQ and Sarah’s at the Palms to sous chef at Lolita.
Chef Young’s appointment reaffirms HALCYON’s commitment to delivering exceptional dining experiences as his leadership continues to elevate the hotel’s culinary program.
