Chef Tony Xu appointed Executive Chef of Michelin-starred Shang Palace Restaurant at Shangri-La Paris

For immediate release: Shangri-La Paris is delighted to announce the appointment of Chef Tony Xu as Executive Chef of Shang Palace, the only Michelin-starred Chinese restaurant in all of France.

Having retained the international accolade for the past 13 years, Chef Xu, who hails from the city of Chengdu located in southwest China, aims to continue the culinary heritage that has made the restaurant famous since it opened in 2011, while bringing his own personality to the table.

“It’s a real honor to take the helm at Shang Palace, this authentic and legendary restaurant that shines in Paris and around the world,” explains Chef Xu.

He will unveil his new menu this autumn, supported by a seasoned team equipped with traditional know-how and mastery of all aspects of Chinese gastronomy. The critically acclaimed restaurant has four masters. A Wok, barbecue, chopper and Dim Sum master, who will continue to contribute to the uniqueness of Shang Palace’s authentic and world-renowned gastronomic experience. Chef Xu has joined the team in Paris from Mi Xun Teahouse, the only Michelin-starred Chinese vegetarian restaurant in Chengdu. He also boasts more than 20 years of experience working for some of the largest international hospitality groups in mainland China including Marriott International and InterContinental Hotels Group.

His sensitivity and innate passion for gastronomy has enabled him to develop a unique vision of modern culinary art, where he draws inspiration from the traditional essence of the different methods of Chinese cuisine while meticulously selecting his products in a sustainable way.

“My passion for cooking began with my grandmother, who instilled in me from an early age the precision of her techniques and the way she combined flavors to create authentic, delicious recipes. My childhood memories really forged my passion for cooking and led me to develop my career at renowned restaurants and I’m delighted to be taking my career to the next level with Shang Palace in the heart of Paris,” explains Chef Xu.

His innate drive combined with his commitment to delivering exceptional dining experiences for his guests, have earnt Chef Xu recognition in the Michelin Guide, as well as earned him awards for restaurants he has led such as the “Black Pearl”, which is the ultimate accolade in Chinese gastronomy.
