In his new role, Chef Kolofon will manage food and beverage services, including the resort’s distinguished restaurants and dining venues, banquets, and private dining. To further enrich the resort’s stellar culinary offerings, The St. Regis Punta Mita Resort recently debuted the Altamira Tapa, Wine & Gin Bar as well as dinner service at the popular Mita Mary Boat Bistro.

With more than 14 years of experience in the hospitality industry, Chef Kolofon has held leadership positions at several of the finest hotels in Mexico, Chicago and the Caribbean. Chef Kolofon joins The St. Regis Punta Mita Resort most recently from Capella Pedregal in Los Cabos, where he served as executive sous chef/head chef overseeing food service operations, seasonal menu development, and banquet services. Chef Kolofon also honed his craft at Villa del Arco in Cabo San Lucas, Hotel 71 in Chicago, Capella St. Lucia in the Caribbean and Capella Telluride in Colorado, and Las Ventanas al Para’so, A Rosewood Resort, Los Cabos.

The St. Regis Punta Mita Resort also welcomes Noe Navarro as pastry chef. With more than ten years of industry experience, Chef Navarro brings his passion for creating the finest desserts, pastries and creative confections to the resort’s discerning guests. Most recently, Navarro served as pastry chef at Hotel Velas Vallarta and Banyan Tree Mayakoba.
