Josh Elliott is the Executive Chef at THesis Hotel Miami, located at the intersection of Coral Gables, South Miami, and Coconut Grove, overseeing Mamey restaurant, the rooftop Mamey on 3rd and soon to market Orno restaurant. In this role, Elliott collaborates with visionary Chef Niven Patel, THesis Hotel Miami’s Director of Culinary.

Having worked every station on the line, all positions in the kitchen, as well as multiple positions in the front of the house, Elliott began his career at age 16 as a dishwasher at Pizza Hut and has fully grasped the food and beverage industry by working alongside industry leaders. He has held positions at Eos Restaurant at the Viceroy Hotel, db Bistro Moderne in the JW Marriott Marquis, Hilton Cabana’s signature restaurant L’echon Brasserie, and served as executive chef at the iconic Raleigh Hotel in South Beach Miami.

Prior to joining THesis Hotel Miami, Mamey Restaurant, and Mamey on 3rd, Elliott served as the executive chef at Toro Boston, an award-winning Spanish tapas restaurant and bar. During his time at Toro, Elliott was named by StarChefs as one of their Boston Rising Star Chefs in 2020 for his traditional and modern take on Barcelona-style tapas.

Born and raised in Little Rock, Arkansas, traditional Southern hospitality was ingrained in him from a young age. He graduated summa cum laude from Johnson and Wales University and received his Bachelor of Science degree in culinary arts.
