Chef Hammett Brings Over 20 Years of Culinary Expertise and a Passion for Local Ingredients to Copper Canyon Grill House & Tavern

Hammett will oversee all food and beverage offerings, including Copper Canyon Grill House & Tavern, banquets and events, in-room dining and the coffee shop 215 West Coffee, set to open in late 2024.

Amid the city’s rapid development and the hotel’s recent multimillion-dollar renovation, Radisson Salt Lake City’s culinary offerings are poised for an update. With over two decades of culinary expertise and a passion for the greater Salt Lake and Park City communities, Chef Hammett is preparing to introduce refreshed menus to the hotel. Guests can look forward to modern, refined American comfort food featuring locally sourced ingredients.

Chef Hammett’s vision for the hotel’s culinary operations focuses on elevated, traditional favorites that showcase the best of Utah’s produce, meats and cheeses. Guests can look forward to dishes featuring seasonal ingredients such as rhubarb, cherries, and peaches, along with other sustainable options from regional suppliers. The banquet and event menus will also see new additions, incorporating local flavors to create memorable dining experiences for special occasions. Highlights of the new Copper Canyon Grill House & Tavern menu will include a fresh take on signature burgers, farm-to-table salads, and enhanced small bites perfect for sharing.

Born and raised in Utah, Chef Hammett moved to Arizona to attend the Scottsdale Culinary Institute. After graduating, he returned to his home state to pursue his culinary career. Since then, he has held executive positions at establishments such as Yarrow Hotel in Park City, Hilton Salt Lake City Airport and Equiwest Hospitality, where he revitalized menus and implemented sustainable practices.
