Rosewood Le Guanahani St. Barth, the legendary island escape on Saint Barthélemy, is pleased to announce the appointment of Chef Cedrik Ollivault as Executive Chef. Chef Ollivault will be responsible for overseeing the culinary program of Rosewood Le Guanahani, including its signature dining venue, Beach House St. Barth.

Citing his parents’ passion for cooking as one of his main inspirations, Chef Ollivault brings his French heritage and techniques to the resort with an authentic style of cooking that lets the food’s true flavors shine through. “It is my responsibility to ensure that we create exceptional memories for our guests”, says Chef Ollivaut, “My passion for cooking, island life and stunning natural environments led me to joining Rosewood Le Guanahani. Further developing the culinary concept of Beach House St. Barth is a wonderful challenge and our team looks forward to refreshing the energy and menus while blending in new flavors.”
Prior to joining Rosewood Le Guanahani, Chef Ollivault worked at One and Only The Palm in Dubai, Disney cruise’s prestigious Remy restaurant by Arnaud Lallement, Hotel Bora Bora Lagoon Resort & Spa and the spectacular The Brando in French Polynesia. Originally from the northwestern region of Rennes, France, Chef Ollivault attended the CCI Professional School of Rennes while simultaneously training and working at L’Escu de Runfao, the Michelin starred restaurant of Chef Alain Duhoux. During his three years there, he rose from apprentice to Sous Chef and his career was launched. This is a full circle moment for Chef Olivaut who, as a young chef, spent a summer honing his cooking skills in St. Barth.
