Vincent Wallez has been appointed executive chef of Rosewood San Miguel de Allende, Mexico’s preeminent luxury hotel nestled in one of the world’s richest culinary destinations. In this role, Vincent will lead the talented culinary team at the hotel’s five distinctive dining venues: 1826 Restaurant, Luna Rooftop Tapas Bar, Cava, Agua, and Los Pirules.

Prior to joining Rosewood San Miguel de Allende, Vincent served as the executive chef at Grand Velas Los Cabos resort, where he oversaw the hotel’s culinary operations for five fine-dining restaurants with extensive beverage and wine programs. Preceding this position, he worked as the executive chef at a number of top hotels throughout Mexico including the Andaz Mayakoba Resort Riviera Maya, the Hotel Nizuc Resort and Spa, the Grand Fiesta Americana Coral Beach Cancun, and the Grand Bahia Principe Tulum. Before bringing his culinary talents to the southern hemisphere, Vincent worked in France and Russia, gaining experience in a number of Michelin-starred restaurants including La Tour d’Argent in Paris, where he began his career. A native of Bayonne, France, Vincent holds a certificate of professional studies and a Bachelor of Professional Kitchen studies from the École Hôtelièr de Paris.
