DALLAS, TX (June 28, 2024) – The original address for hospitality in Dallas, The Adolphus is pleased to announce the appointment of Stephan Fitz as Director of Food and Beverage. A seasoned leader with decades of experience in the industry, Fitz will oversee the hotel’s five distinct dining experiences alongside its banquets and catering program. This includes The French Room, Dallas’ most iconic fine dining establishment; The French Room Bar, an elegant artisanal cocktail bar; City Hall Bistro, a lively daytime bistro paying homage to the original site of Dallas’ City Hall; Rodeo Bar, a casual yet gritty Western saloon; and Otto’s Coffee & Fine Foods, a leisurely Viennese coffee destination.

Prior to joining The Adolphus, Fitz served as the Director of Food and Beverage for leading hotels throughout the Southeast including The Boca Raton in Florida, Kalahari Resorts & Conventions in Texas, and The Capital Hilton in Washington D.C. Fitz has additionally held management roles with renowned hotel brands including InterContinental, Sheraton, Omni, Hilton, and more. Originally from Frankfurt, Germany, Fitz earned his degree in hospitality management from a local vocational school and began his career at Westin Grand Hotel in Frankfurt before moving to the United States.
In addition to managing The Adolphus’ onsite concepts, Fitz will oversee the hotel’s culinary teams—collaborating with the hotel’s executive chef to curate inventive seasonal specials, implementing innovative revenue strategies, and engaging with the general manager to offer exceptional guest experiences—with a dedication to fostering a culture of excellence.
Fitz’s passion for hospitality extends beyond the confines of his professional roles. In his spare time, he enjoys exploring new restaurants and bars, traveling throughout Europe and relishing a glass of top-shelf whiskey.
Under Fitz’s leadership, The Adolphus is poised to uphold its reputation as an icon of hospitality, history, and culture in Dallas. The 407-key hotel will introduce a number of exciting guest experiences and packages throughout the summer along with another season of the luxury hotel’s most coveted tradition, The French Room Holiday Tea, come fall.
