Introducing David Schaumburger: A Culinary Journey from Germany, Across the Middle East, to the Mile High City

DENVER, COLORADO (July 29, 2024) – Today, The Ritz-Carlton, Denver, Denver’s longest-holding Five Diamond hotel, is pleased to announce the appointment of David Schaumburger to the role of executive chef overseeing all culinary operations including the hotel’s newly renovated signature restaurant, ELWAY’S Downtown. Chef David’s wealth of international culinary experience and passion for excellence will contribute to the reimagined space and experience at the beloved contemporary steakhouse and the hotel as a whole. As Executive Chef at The Ritz-Carlton, Denver, Schaumburger will pilot menu development, ingredient sourcing, and banquet offerings while leading culinary education and championing skills development for his staff.

David’s culinary journey began on the picturesque French border, where he developed a love for cooking at an early age under the guidance of his father, a skilled butcher. Inspired by this upbringing, David pursued formal culinary training and honed his skills at the prestigious Landschloss Fasanerie. His career flourished at the two Michelin Star-rated Restaurant Villa Rothschild, where he trained under the tutelage of Executive Chef Chris Rainer. Here, David refined his craft, seamlessly blending the precision of German cuisine with the finesse of French culinary techniques. Seeking new challenges, David ventured to the Frankfurt Marriott Hotel, overseeing operations for three distinguished restaurants and banquets. His journey then took him to Dubai, where he played a pivotal role in the opening of a luxurious new hotel, showcasing his ability to deliver unparalleled dining experiences on a global scale. In that very year, he won the Rising Star Award for the Middle East and Africa from Marriott International.

Schaumburger continued his journey in the United States at The Ritz-Carlton, Naples where he served as Executive Sous Chef, and was responsible for orchestrating exceptional banquets and overseeing one of the country’s finest club lounges.

This spring, ELWAY’s Downtown debuted an updated look and revamped menu that encapsulates the spirit of Colorado – serving the finest cuts, flavors and fresh seafood. Led by Design ONE Studio, the renovation was inclusive of the dining room, central bar and multiple private dining rooms for groups, including an intimate Chef’s Table. The design pays homage to NFL legend and restaurant’s namesake, John Elway, with a subtle weave of Broncos blue and orange, textured leathers, and memorabilia throughout.
