With over 20 years of experience in the restaurant and hotel business, Montuori brings his Michelin background, exceptional leadership, organization and culinary skills to the St. Regis Maldives. As Executive Chef, he will further elevate the world-class resort’s culinary institutions, using his international experience with iconic five-star luxury properties including Hassler Hotel Rome, National Hotel Moscow, La Reserve Geneva, and One&Only Reethi Rah Maldives. Prior to joining the team at The St. Regis Maldives Vommuli Resort, Montuori was Executive Chef at Kuda Villingili Resort Maldives, Baglioni Resort Maldives on Maagau Island, and the Kempinski SPA Hotel in Gozo, Malta.
Montuori will also pioneer the opening of the resort’s new restaurant concept, T-pan. Slated for its grand opening in November, T-Pan will offer Omakase menus with flavors of the finest ingredients from the Maldives and around the globe, in addition to exquisite Japanese whiskeys, teas from Boutique Japanese tea houses and bespoke Sakes from the world-famous Sake house Dassai,  the finest collections of gins, beers, and specially curated tasting flights.Â
