Prim will oversee all culinary operations for Viceroy Los Cabos’ sophisticated and innovative dining venues, including the resort’s newest signature restaurant, Dalia.
A Mexico City native, Chef Bernard Prim has an innate understanding of Mexican flavors blended with a unique perspective of global cuisines and regional influences, as he has worked in kitchens all over the world. Prim’s steadfast dedication and passion for cooking have led to an esteemed reputation and career in the culinary and hospitality industry. With Prim at the helm, the culinary team will take dining at Viceroy Los Cabos to a whole new level in 2023, underscored by the utmost quality and professionalism.
Before his role at Viceroy Los Cabos, Prim spent over three years working as the Executive Chef at the five-star resort Belmond La Samanna on the island of St. Martin in the Caribbean, where he oversaw all culinary efforts. Prim’s career began as he studied under a culinary apprenticeship in Germany. Throughout his career, Prim has elevated the dining programs for numerous five-star and award-winning properties across the globe from Europe, Asia to the Caribbean. Prim has served in a number of executive chef roles – at The Amandari in Bali, Indonesia, Nihiwatu Resort in Sumba, Indonesia, Villa Treville and Le Sirene Treville Beach Club, in Positano, Italy, the TreVille Phuket in Thailand, and Alila Villas Koh Russey in Cambodia.
Prim will be leading Viceroy Los Cabos’ five atmospheric dining venues, each providing a distinct and unforgettable culinary experience. Culinary concepts reflect the history and culture of the Baja, ranging from fresh seafood and traditional Mexican cuisine to urban farm-to-table and open grill cooking, and seafood with Asian influences.
The resort’s newest restaurant, the outdoor garden restaurant Dalia brings a touch of Mediterranean flair to Los Cabos, serving a creative menu that blends traditional Mediterranean flavors with Baja culinary influences. Viceroy Los Cabos’ five other atmospheric dining venues each provide a distinct and unforgettable culinary experience. “Nido” Restaurant, translated from Spanish to mean “nest,” is both a visual centerpiece and social epicenter. Beach and poolside bar, Nidito – meaning “little nest” – is a lively extension of Nido restaurant, delivering a selection of refreshing cocktails and delicious bites. Located off the lower lobby, Casero – meaning “homemade” – and Otro Bar – meaning “another” – feature traditional Mexican cuisine and a Tequila Library equipped with house infusions, while the rooftop bar and lounge, Cielomar offers weekly entertainment and breathtaking views.
