LOS CABOS, Mexico — August 9, 2021 — Marquis Los Cabos, one of the Leading Hotels of the World, has today announced the retirement of long tenured Executive Chef, Thierry Dufour. Marquis Los Cabos’ culinary program will be now helmed by new Executive Chef, Miguel Paulino.

Executive Chef Thierry Dufour embraced dining as an adventure of the senses, and his distinct culinary vision was felt throughout the numerous dining offerings at the luxury property as the lead chef since the resort’s opening. Over the past 18 years, his cuisine shared his inherent warmth, sophistication and conviviality through the celebration of fresh, seasonal flavors and creative dishes.

Dufour brought an illustrious reputation to Marquis Los Cabos, having received an impressive education in classic French cuisine. A Chaîne des Rôtisseurs member, he trained under a series of Michelin-starred chefs and restaurants, holds the coveted title of Maître Cuisiniers de France and is a culinary mentor and teacher within his local Los Cabos community. Dufour’s innovation became synonymous with the Marquis Los Cabos experience, and as his professional chapter draws to a close, the resort will continue to celebrate his vision in his retirement with the transfer of leadership to a passionate, new chef with a culinary prowess all his own.

Paulino has led culinary teams around the world, from Mexico to Portugal, with roles at Hard Rock Hotel, Hilton, Sheraton, and more. With over 12 years of experience, Paulino is an expert in menu development, plating and presentation, ensuring that every dish that is served looks as exquisite as it tastes. Paulino will oversee Marquis Los Cabos’ five restaurants, decadent coffee shop, and full Suite Service offering. The resort is pleased to usher in a new era of culinary excellence.
