Andermatt, Switzerland (June 23, 2022) – The Chedi Andermatt is thrilled to announce the appointment of Carsten Alexander Kypke as executive chef to oversee the property’s gastronomy program and The Restaurant, the hotel’s dining centerpiece. Chef Kypke brings a new level of creativity and innovation to The Chedi Andermatt’s culinary program, as well as leading both in-room dining and catering menu development. Chef Dietmar Sawyere will remain as the mastermind and executive chef of The Japanese Restaurant (1 Michelin star, 17 GaultMillau points) and The Japanese by The Chedi Andermatt (1 Michelin star, 15 GaultMillau points). The experienced power duo, Chef Kypke and Chef Sawyere, will work together to curate fine dining dishes that are second to none in Switzerland.

Chef Kypke brings an innovative gourmet experience and a great deal of passion to The Chedi Andermatt. The Cuisinier, who was born in Berlin, most recently worked in his hometown in the Charlottenburg district as executive chef at the Waldorf Astoria and was responsible, among other things, for the cuisine in the hotel’s ROCA restaurant. Prior to that position, Kypke worked at the 5-star hotel Sofitel Vienna Stephansdom and established “Das LOFT”, now known as one of the gastronomic places-to-be in the Austrian capital. But he has also made a name for himself in the Swiss capital as Executive Sous Chef at Bellevue Palace Bern. Together with Georg Zimmermann he cooked at the highest level for heads of state, royals and national and international (political) celebrities. Whether Dubai or Turks and Caicos Island, Chef Kypke learned his craft around the world and infused each of his influences into his cooking.
“I’m particularly fascinated by Asian-inspired cuisine, which led me to The Chedi Andermatt, known for combining authentic Swiss alpine chic with Asian style,” said executive chef Carsten Alexander Kypke. “The Asian world of pleasure, with its different spices and preparation methods, is a great inspiration for me. The numerous facets of the kitchen, the ingredients that are still rather unknown in this country, the different textures and the game with spiciness require a lot of sensitivity. Chef Kypke will continue his guest-focused culinary style at The Chedi Andermatt, providing thoughtfully executed approaches to The Restaurant’s gourmet yet modern fare.
