Joe Shonce to oversee all culinary operations at Award-Winning Hotel in Columbus, Ohio

COLUMBUS, OHIO, May 13, 2024— The Junto, Columbus, Ohio’s first independent lifestyle hotel, is honored to announce Joe Shonce as its new Executive Chef. With his exceptional accomplishments and commitment to culinary education and advancement, Chef Shonce is well-equipped to enrich the dining experience at The Junto’s renowned concepts. As Executive Chef, Shonce will oversee all culinary operations at The Junto’s onsite eateries including Little West Tavern, Little West Poutine, Brass Eye, Maudine’s and The Trade Room.

With over two decades of experience in the hospitality industry, Chef Shonce brings extensive culinary experience to The Junto. His culinary journey began in 2003 at a small family-owned Italian restaurant in Youngstown, Ohio. Before making his way to Columbus, Shonce spent 13 years working at restaurants in both Chicago and Las Vegas. As Sous Chef, he managed a strong culinary team and oversaw menu development. While working at restaurants and hotels such as Mon Ami Gabi, Guy Savoy and the Cosmopolitan Hotel of Las Vegas, he gained experience spearheading menu development and mentorship.

Since relocating to Columbus in 2019, Chef Shonce has held the role of Executive Chef at various restaurants. His adept leadership and culinary experience contributed to Bristol Republic’s successful launch. During his time at Eddie Merlot’s, he handled all aspects of kitchen management from menu creation to staff development. Before joining The Junto, he was a Chef Consultant, providing expert advice to culinary ventures in Columbus.

Throughout his career, Joe has emphasized skill development and staff education, guiding his team and encouraging creativity.

The Junto dining experiences offer a variety of options to suit every palate and occasion, from morning breakfast and coffee at Maudine’s to cocktails and conversation at The Trade Room.
