MILWAUKEE – February 7, 2022 – The Kimpton Journeyman, along with its two restaurants, Tre Rivali and The Outsider, are pleased to announce Brian Cripps as its new executive chef.

Growing up in Jacksonville, FL, Chef Brian Cripps love of cooking started at a young age. After a move to California in his early 20’s, he worked as a line cook at Laiola, a Spanish restaurant known for its bold Mediterranean flavors. Cripps’ culinary training continued as he honed his skills through Michelin-star restaurant experience. After working in San Francisco until 2011, he moved Providence, RI for a position at Gracie’s before heading to Los Angeles in 2014 to become the sous chef at Papille’s Bistro. In 2017, he was given an opportunity to be mentored by Chef Ludo Lefebvre as the Chef de Partie at Trois Mec in LA, and after a brief stint at Taverna Restaurant in his hometown of Jacksonville, Cripps rejoined the Kimpton family in 2017 as executive chef of Pacci Italian Kitchen + Bar in Savannah, GA.

In 2021, he moved to Milwaukee, WI, to become the Executive Chef at Kimpton Journeyman, where he now oversees daily operations and menu ideation for Tre Rivali and The Outsider. The Mediterranean-inspired menus are a nod to his roots, and he hopes to continue to bring seasonal, simple ingredients to guests and locals alike.

A woodworker and pool player, when he’s not in the kitchen, Cripps can be found seeking new and exciting restaurants and jaunts around town, or hanging with his dog, Jasper.
