Paris, France – February 2, 2022 – The Ritz Paris announces the arrival of Eugénie Béziat as Chef at L’Espadon, starting April 1st, 2022. In the months ahead, she will work on a new menu and concept for the space, which is now closed and will reopen in its exciting new incarnation in the last quarter of 2022.
Born in Gabon, Eugénie Béziat spent her entire childhood in Africa, an experience that is reflected in her modern, creative cuisine based on unexpected and refined associations.
After earning a BTS Hôtellerie Restauration diploma in Toulouse, in 2006, she embarked on her career as a commis in the kitchen at Michel Guérard’s restaurant Les Prés d’Eugénie***.
There followed several formative experiences before she returned to Toulouse to join Michel Sarran**, where she gradually worked her way up to the rank of Second de Cuisine.
In 2015, she became the Sous-Chef at La Roya* in Corsica; two years later she was named Executive Chef.
She decided to move to the French Riviera in 2018. There, as Chef at the restaurant La Flibuste in Villeneuve-Loubet – coincidentally the birthplace of Auguste Escoffier, the first Chef at the Ritz Paris – she won her first Michelin star in just 18 months.
