Kona Village, A Rosewood Resort is pleased to announce key appointments to their Food & Beverage team – Executive Chef Victor Palma and Director of Food & Beverage Dan Daughtry. Opening in summer 2023, Kona Village, A Rosewood Resort marks the Rosewood brand’s first flag in Hawai’i, and the property is set to honor and celebrate the island’s rich culture and native ingredients through its dynamic food and beverage programming. Both Chef Victor and Dan will bring their expertise to launch the resort’s five distinct outlets, offering guests a range of culinary experiences from Hawaiian comfort food to fine dining.
Executive Chef Victor Palma’s appointment to the team at Kona Village, A Rosewood Resort marks his welcome return to the Rosewood family. Over the course of his two-decade career, he has worked across four Rosewood properties in both Mexico and the U.S., leading celebrated dining programs including those at Las Ventanas al Paraíso, A Rosewood Resort and Rosewood San Miguel de Allende. His most recent role was serving as the Executive Chef at The Cape by Thompson Hyatt in Cabo San Lucas. Demonstrating great pride in his heritage, Chef Victor recognizes the parallels between his Mexican roots and Hawai’i’s culture of genuine hospitality, culinary traditions, and the human connections that are formed through food. From the very start of his new role at Kona Village, A Rosewood Resort, Chef Victor has immersed himself in Hawai’i’s rich culinary culture, cultivating relationships with local purveyors, farmers, and fellow chefs. He will aim to express the destination’s food heritage in an authentic way while incorporating his unique approach to dining.
Dan joins the Rosewood team with 30 years of experience in the food and beverage sector. The return to Hawai’i is especially meaningful for Dan, as he began his career at Hyatt Regency Maui and then took his talents all over the world to properties in North America, Micronesia, and Bermuda, with his most recent role at the Garden of the Gods Resort & Club in Colorado Springs. Drawing from his tenured career, Dan will work to curate and oversee a multi-talented food and beverage team that showcases the natural bounty of the Kohala Coast.

Located on the Kohala Coast of the Big Island of Hawai’i, Kona Village, A Rosewood Resort will debut in summer 2023 as the latest incarnation of its iconic namesake. The property will be home to five restaurants and bars, including the original resort’s beloved Shipwreck Bar and Talk Story Bar. Spanning across 81 acres of stunning geologic landscape and richness, the reimagined resort will draw inspiration from the history of the site, local culture, and natural elements to deliver a distinctively Hawaiian experience.
