Hotel Granada, the highly anticipated boutique hotel by Aparium Hotel Group opening this August in Midtown Atlanta, is pleased to introduce two members to its executive leadership team:  Chef Jaime Cubias as Executive Chef and Rae Doyle as Director of Food & Beverage. With 120 rooms, the meticulously restored 101-year-old Hotel Granada celebrates Aparium’s signature commitment to community connectivity and authentic charm through its main restaurant, Pom Court, led by Cubias and Doyle. Mirroring the hotel’s historic aesthetic, Pom Court features an indoor-outdoor dining experience centered around a courtyard reminiscent of old-world European inns, offering travelers a serene retreat in the heart of bustling Midtown.

Chef Jaime Cubias, Executive Chef

Born in San Salvador and raised in Miami, Chef Cubias’ journey began at a young age when he experimented with diverse flavors in his mother’s kitchen.  He was trained at Le Cordon Bleu College of Culinary Arts and honed his skills at esteemed kitchens, starting with The Four Seasons Anguilla, to The Knickerbocker Hotel in New York City, followed by prominent establishments in Atlanta like The Optimist, Waldorf Astoria and Mandarin Oriental. Now with 18 years of culinary mastery under his belt, Cubias will lead Hotel Granada’s all-day drinking and dining destination, Pom Court, executing a menu that celebrates Southern cuisine intertwined with the vibrant flavors of Spain.

Rae Doyle, Director of Food & Beverage

Originally from St. Louis, Doyle’s career has spanned various notable roles across the Midwest, where she excelled in bar and beverage programs. After receiving her BA from Truman State University and an MBA from the University of Iowa, her career journey took her to serve as F&B Manager at Hilton Des Moines, refine her skills as a bartender at the intimate cocktail bar The Bartender’s Handshake, and later take on the roles of Beverage Director and Marketing Manager at RoCA. Following a stint as a freelance restaurant consultant, she joined Aparium Hotel Group team as the Director of Food and Beverage for Des Moines’ Surety Hotel in 2022. Her professional accolades include a certification from the Court of Master Sommeliers and multiple wins as the Winefest Des Moines ‘Iron Somm’. In her new role, Rae oversees Pom Court and a forthcoming cocktail bar set to open this fall, helping to shape the culinary and beverage experiences that define the property.
